Freeze-Dried Blueberry and Chocolate Cookies
Chocolate + Blueberry cookies

Ingredients:

1 3/4 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup Organic Natierra Cacao Powder

2 1/4 cups all-purpose flour

1/2 tsp baking powder

1 cup Organic Freeze-Dried Blueberries

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Place softened butter and sugar into a large mixing bowl. Mix, using a hand mixer or stand mixer on medium speed for 1-2 minutes, or until the butter mixture is pale yellow, light, and fluffy.
  3. In a separate bowl, whisk together the all-purpose flour, Natierra's cacao powder, and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients in the mixer and once the dough starts to form, mix it by hand.
  5. Gently fold in the Organic Freeze-Dried Blueberries, ensuring they are evenly distributed throughout the cookie dough.
  6. Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheets, leaving enough space between each cookie.
  7. Flatten each cookie slightly with the back of a spoon or your fingertips.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft.
  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
